Jim and Donna Pacheco operate Achadinha on a family farm in Petaluma, making farmstead cheese from milk produced by their own goat herd. Farmstead means the animals and the cheesemaking are on the same property — the milk never travels. Their cheeses are fresh and aged, with varieties that change by season as the goats' diet shifts. The fresh chèvre is mild and creamy; the aged Capricious is sharper, crumblier, more complex. Achadinha is one of the most praised cheese vendors at any SF market and a reliable highlight at Divisadero.
